This All in one bowl Cherry Cake Recipe is really simple to make. While still hot brush with Apricot Jam. Cooks in 2 ¼ to 2 ½ hours.
Ingredients for All in one bowl Cherry Cake :
- 6 ozs butter
- 6 ozs caster sugar
- 3 eggs
- 4 ozs sultanas
- 3 ozs cherries (Fresh or “glazed” chopped or cut with scissors)
- 1 oz cut peel (optional I use more cherries)
- 8 ozs plain flour
- ½ level tsp baking powder
Method for All in one bowl Cherry Cake :
- Just whisk all together (I use a hand whisk)
- Spoon into a 2 lb loaf tin (or equivalent)
- Bake in a PREHEATED oven (always important) at 160c (fan oven 150c) gas 2, 300F for 2 ¼ to 2 ½ hours.
- Skewer test – when skewer comes out ” clean, cake is cooked.
- While still hot brush with Apricot jam (my dried apricot jam recipe)
I have just made my fresh cherry cake again today , it is still as quick to make & still as delicious BUT it didn’t need quite as long in the oven!! 1& 3/4 of an hour
approx so best to look , after say 1& 1/2 hours
Each oven is different , so it is ” trial & error???”
We don’t need the error bit!!
I just made this in a fan assisted oven and it took 55 mins so it is best to check towards the hour. Tastes amazing I recommend this one its YUMMY
Just made it for the 1st time and was delicious, as previous comments say it does’nt seem to need quite so long to bake. Will certainly bake it again.
this cherry cake was amazing, note “was” amazing cos we have eaten it all
still warm out of the oven
delicious!!!!
thanks from my kids and myself
First time making cherry cake, came out great. Really easy to do.
Cake was lovely. I was looking for a recipe without ground almonds as I wanted a nice, moist texture without being too dense/heavy. This recipe was perfect! It didn’t need 2hrs though. I baked it at 160degrees (non Fan) and it was done in 1hr 10 mins. And that included having to cover it loosely with foil after 35 mins to stop the top browning too much. I’d definitely recommend checking your cake and skewering after 1hr to see how done it is. 160degrees non Fan was just the right temperature for the cake to rise well and evenly. I love cherries
