Quick and easy sweetcorn fritters. This recipe makes 8 fritters – perfect for lunch or dinner served with potatoes and salad or can be eaten as a snack. Can be frozen and also can be made with gluten free flour.
Ingredients for Sweetcorn Fritters:
- 8 oz (225 g) cooked sweetcorn kernels
- 2 oz (56) flour
- ¼ to ½ teaspoon paprika
- 2 medium free-range eggs
- Oil for frying
Method for Sweetcorn Fritters:
- Mix together the flour, paprika, salt and sweetcorn kernels. Stir in the eggs yolks, which have been beaten until thick. Fold in the stiffly beaten egg whites.
- Heat the oil until very hot and spoon the sweetcorn mixture into the pan, cooking on both sides.
- Drain on kitchen roll.
- Serve hot.
