Quick and easy sweetcorn fritters. This recipe makes 8 fritters – perfect for lunch or dinner served with potatoes and salad or can be eaten as a snack. Can be frozen and also can be made with gluten free flour.

Ingredients for Sweetcorn Fritters:

  • 8 oz (225 g) cooked sweetcorn kernels
  • 2 oz (56) flour
  • ¼ to ½ teaspoon paprika
  • Salt
  • 2 medium free-range eggs
  • Oil for frying

Method for Sweetcorn Fritters:

  1. Mix together the flour, paprika, salt and sweetcorn kernels.  Stir in the eggs yolks, which have been beaten until thick. Fold in the stiffly beaten egg whites.
  2. Heat the oil until very hot and spoon the sweetcorn mixture into the pan, cooking on both sides.
  3. Drain on kitchen roll.
  4. Serve hot.
