Ingredients for Cucumber Mayonnaise:
- ½ pint of home made or good quality shop mayonnaise.
- ½ a cucumber washed and chopped (leave skin on unless it’s bitter).
- 10 washed capers.
- 1 tbls of lemon juice.
- 2 tbls of fresh coriander leaf.
Method for Cucumber Mayonnaise:
Put all ingredients in a blender and process till smooth and green adding extra lemon juice if it’s to thick. Season to taste.

It’s not my recipe but I’d use it up within a month and keep refrigerated.
