These coconut buns are super easy to make. Great for making with the children in the kitchen on a wet afternoon in the holidays.

They particularly love spooning jam onto the top of the buns and if you turn your back they’ll be spooning it into themselves!

Ingredients for Coconut Buns:

  • 125g/4oz self raising flour
  • 125g/4oz desiccated coconut
  • 75g/3oz sugar
  • 125g/4oz margarine or butter
  • 1 beaten egg

Method for Making the Coconut Buns:

  1. Mix all ingredients together in a bowl.
  2. Spoon into rough heaps in bun cases.
  3. Bake at 190ºC/ gas Mark 5 for 10 to 15 minutes.
  4. Remove from oven and transfer buns to wire tray to cool.
  5. Brush the top with jam and dip in coconut (optional).

    I have just tried this recipe and the buns are cooking in the oven. I have a feeling they might turn into biscuits!

    Made these this morning. Tasted great and such a simple recipe. Will definitely be making them again. ☺

    I reduced the sugar to 2 oz and recommend that coconut is reduced to 3 oz. Also added a drop of vamilla essence.
    I also added the milk as suggested. Make sure the buns are cold before you add jam and jam is cold before you add the coconut.
    Simply delicious. These buns stay fresh for a few days.
