Onion and Potato Bhaji

Ingredients for Onion and Potato Bhaji:

  • 8/9 tablespoons gram (chickpea) flour
  • 1½ teaspoons chilli powder
  • 1½ teaspoons  salt
  • 1 teaspoon ground coriander
  • 1  teaspoon ground cumin
  • 1  teaspoon garam masala
  • 1 medium potato – cut into thin slices/pieces
  • 1 onion – cut into thin slices/pieces
  • lemon juice
  • oil to fry

Method for Onion and Potato Bhaji:

  1. Sieve flour into medium bowl
  2. Add cold water as necessary to make a thick cream consistency
  3. Add all spices and mix well
  4. Add the sliced veg ensuring they are well coated with the mixture
  5. Add a few drops of lemon juice and mix again
  6. Heat oil up slowly until hot
  7. Ladle out the mixture using a tablespoon at a time and lower carefully into oil, space them about to avoid sticking, about 6 in a batch.
  8. Turn heat to ¾ full and cook for 8-10mins until golden brown
  9. Taste and add extra spices for next batch if they are not spicy enough for you!
