I found this Lemon, Marmalade and Courgette Cake to be very moist, had a good lemon flavour and little chewy in texture. Went down very well with all those that tried it.
My Uncle said it went well with custard as a pudding.
Absolutely fantastic, everybody loved it !!
A lovely moist cake. I used a mixture of green and yellow courgettes, Benecol instead of butter and Rose’s lemon and lime marmalade, gave it a bit of a tang. This has been the nicest cake I have baked using our glut of courgettes. I have made 2 in as many days, hopefully todays effort will make it to the freezer!
So fantastic making more. My neighbour says it is the tastiest cake she has ever eaten. Fancying some custard with it tonight !
