Recipe for Rhubarb Cake sent in by: Sue Cooper
Ingredients for Rhubarb Cake:
- 3 oz butter
- 3 oz caster sugar
- 2 eggs
- 3 oz self raising flour
- 1 lb rhubarb
- 1 tbsp demerara sugar for the topping
- 2 ½ oz butter
- 3oz plain flour
- 1oz caster sugar
Method for Rhubarb Cake:
- Preheat oven to 190 c.
- Grease a 8in round cake tin. Cream the butter and sugar, beat in the eggs, fold in the flour and add a pinch of salt.
- Slice the rhubarb into 1 in pieces and toss in the demerara sugar.
- To make the topping, rub the butter into the flour and stir in the sugar.
- Pour the cake mix into the tin and arrange the rhubarb on top.
- Sprinkle the topping over and bake for 40-45 mins.
Notes:
Serve with a dollop of double cream!!
This cake was just perfect used with forced rhubarb.
10/10 will deffinately be trying it again with vanilla ice cream

Further to add for the rubarb cake. Had another go this weekend and added orange zest to the cake mixture and choc drops and rolled oats to the crumble. YUMMY

This is now a firm favourite in our family!! I have added oats and sunflowers seeds to the topping – delicious
have made rhubarb cake for family and friends now and the verdict has been really gr8! I love it warm from the oven with either good quality vanilla ice cream or a good spoon of clotted cream! Am going to try crushed hazelnuts in crumble mixture next time.

Lovely recipe, thanks…only I found it needed more like 1 hour 10 minutes in fan oven at 170C. Maybe cos the rhubarb was very juicy? Delicious anyway.

I love this rhubarb cake recipe its brill… it also works really well with apples when your out of rhubarb – both are now my favourite cakes and all my family and friends love it.

Made this cake yesterday. It is just fabulous. The rhubarb was from the garden which is so good this year. It is one of the best rhubarb recipes I have tried so far.
Made mine with a mix of rhubarb and apples; made double quantity of crumble mix and added a few oats too. Yummmmmmy!
