Grown in Britain from before 1820, Hollow Crown is probably the oldest parsnip still in cultivation. The name comes from the way the top of the parsnip drops in towards the leaves, forming a crown shape. Each root will grow to around 30cm (12), with nice solid flesh and very sweet flavour. Let the roots get frost kissed before harvesting, to maximise the sweet taste.
