Recipe for Too Many Tomatoes sent in by: Tony Hogger

Ingredients for Too Many Tomatoes:

  • Tomatoes to cover a baking tray
  • Onions
  • Red Wine
  • Herbs
  • Salt and Pepper

Method for Too Many Tomatoes:

  1. Cut up the tomatoes, chop the onions. Place in a big oven tray and add the herbs, simply pour on the red wine and cover with foil.
  2. Bake for about 1 hour, there is no rule, just when it is all soft .
  3. Liquidise and pour into containers or freezer bags, freezes really well.

Notes:

The beauty of this is there is no set recipe and no weights to follow . Now when your doing a spaghetti bolognaise or lasagne, your sauce is done, you can adjust the thickness with water. Last year we made loads of it and it lasted all winter
