Recipe for Savoury Swede Pudding sent in by: Granny Dumplin
Ingredients for Savoury Swede Pudding:
- 1 lb Swede peeled and cut into ½ inch cubes
- ½ cup fine white breadcrumbs
- 3 tbsp milk
- 2 tbsp bacon lard/fat
- 6 slices streaky bacon
- 1 tsp salt
- 1 tsp sugar
- 2 eggs, well beaten
- Good pinch of ground ginger
Method for Savoury Swede Pudding:
- Preheat the oven to medium
- Boil Swede in plenty of salted water for 7-8 mins (until tender)
- Drain and cool
- While Swede is cooking, grill bacon till crispy
- Drain bacon, cool then crumble, reserving 2 tbs or so of the bacon lard
- Mash Swede thoroughly, and then add all the other ingredients including lard
- Put into a 2 qt casserole and bake for 1 hour.
- Finish with a sprinkling of ground ginger (cinnamon can be used)
Notes:
Puddings have been a staple of English cuisine for hundreds of years. It’s only recently that the term has come to mean sweet.
