Recipe for Green Tomato Jam

If you’re using actual lemons, grate the rind from them and squeeze out the juice. You can then putĀ  the grated rind in with the ginger in the muslin bag.

Ingredients for Green Tomato Jam:

  • 3 lb (1.5 kg) green tomatoes
  • 2 lb (1 kg) cooking apples
  • Juice of 2 lemons (or 4 tablespoons of bottled Lemon Juice)
  • 1 oz (25 g) root ginger
  • water
  • 3 lb (1.5 kg) granulated sugar

Method for Green Tomato Jam:

  1. Wash the tomatoes, cut into quarters.
  2. Peel and core the apples and cut into chunks.
  3. Put tomatoes and apples into a pan. Add the lemon juice. Bruise the ginger and tie in a muslin bag and place into the pan.
  4. Cover with enough water to come to the level of the fruit.
  5. Bring to the boil and cook until the fruit is tender. Add the sugar, stir until dissolved, then simmer, stirring occasionally, until thick.
  6. Remove the ginger. Pour into sterilized warm jars and cover.

Makes about 4 lb (2 kg) of jam

    As far as I can remember, my mum used to make this jam every year, as I am french it was without ginger which was absolutely unknown in France at the time (I’m 63), and I carry on making it because I have an allotment, and October leaves me with kilos of unripe tomatoes. I will try this year with ginger for a change. Thanks for the idea.

    Thank you for this recipe, I have just harvest my loads of Green Tomatoes, and was hoping to make something other than Chutney ( I made it for the first time ever last year 2010)
