Peppers stuffed with Chickpeas and Onions in a Tomato sauce Recipe submitted by wighty

Serves six, cook at 200C or Gas Mark 6

Ingredients for Peppers stuffed with Chickpeas and Onions in a Tomato sauce:

  • 1 tbsp olive oil
  • 2 onions chopped
  • garlic to taste
  • 1 ½ tsp sage
  • 2 cans chickpeas
  • 6 red peppers
  • 2 cans chopped tomatoes
  • 1 tsp mixes herbs

Method for Peppers stuffed with Chickpeas and Onions in a Tomato sauce:

  1. Heat oil and add onions and garlic, cover and cook on low heat for 30 minutes until brown.
  2. Put 2/3 onion in bowl , add chickpeas and sage, stuff into peppers.  Mix rest of onions with tomatoes and herbs. Pour round peppers.
  3. Bake for 1 hour basting frequently.
  4. Serve with crusty bread.

A healthy, balanced vegetarian – vegan even – meal but don’t let that put you off! It’s delicious.

You can, of course, use your own tomatoes and peppers in the recipe. Instead of canned chickpeas, consider buying a bag of dried and re-hydrating them. Far more economical, especially if you have an Asian supermarket near or good wholefood shop selling at low prices.
