Ingredients for Roasted Cherry Tomatoes:
- Cherry tomatoes
- Olive oil
- Handful of garlic cloves
- Peeled dried chilli flakes (if liked)
- Dried oregano & basil
- Salt and pepper
MethodĀ for Roasted Cherry Tomatoes:
- Get your oven really hot – about 220C
- Put a handful of cherry tomatoes and the garlic in a bowl with a pinch of dried chilli, oregano and basil (dried herbs give more flavour than fresh).
- Add as much salt and pepper as you like and swirl around with a good glug of olive oil.
- Roast in a shallow tin/tray (so that it’s all in a single layer) until the tomatoes are beginning to blacken a bit – half to three quarters of an hour or so.
This is great stirred into pasta, on a pizza, or just eaten with a spoon
Try squishing then a bit with a fork and spreading on bread, or allowing to cool and mixing with some cream cheese for a sandwich filling or in jacket potatoes.
